Australian Motorcycle Museum
While I have not been to Australia this looks like a great museum to visit. This is a list of makes on their site and it pretty much covers a wide variety of motorcycles. The proverbial AJS to Zundapp. It appears they are looking to expand the facilities and add to the collection. The museum is located approximately 50km outside of Brisbane.
